FOOD | Panaderya Toyo: Some seriously expensive bread
If there's anything this pandemic has done to our household, it's that it has expanded our knowledge of all things delivery—from groceries, cat food, to wet market goods and pasabuys, you name it. It also allowed us to try stuff that are new to us from the comfort of our home. One of these is Panaderya Toyo, which takes the bakery concept to a whole new level. And price point.
We ordered three of their offerings: Tocino Balikbayan, Leche Pan, and Potpot Pan de Sal. Expectations were naturally high and in terms of presentation, they delivered with their use of paper and yarn that resembled mini-ropes. Our delivery also came with a sticker set.
Tocino Balikbayan is kabayan reinvented.
Tocino Balikbayan

An interpretation of the Pinoy bakery staple kabayan, this is a small but dense, sweet and savory bun. There's a little sourness to it as well. It has a slightly crumbly and oily consistency, with tiny bits of tocino mixed in the dough. Personally I'm weirded out by the taste. My wife likes it but it's just not to my liking.

The dark and shiny top looks very inviting. The bread itself is nice and soft, albeit a little dry. Flavor-wise, there's really not much to it since it's basically a plain o'l loaf of bread.
Potpot Pan de Sal is the probably the heaviest pan de sal that I've had.

This is definitely the heaviest and densest pan de sal I have ever had. This Filipino bread is typically light and airy, so Panaderya Toyo's version proved to be quite the surprise. It also tasted different with its buttery, sourdough-like take on this classic. Now this is good stuff!

So far, I'm generally underwhelmed with Panaderya Toyo. For sure they have their reasons for commanding such prices but from what I've tried, I'm better off with the likes of Bread Talk and Bizu, which, while also not cheap, aren't as expensive. But if any, I'll have their Potpot Pan de Sal again anytime.
